You will need |
300g of chocolate- dark chocolate is best. 70g of unsalted butter 70g of caster sugar 8 eggs 300ml of double cream |

What to do |
1. Chop up the chocolate into little chunks. 2. Put the butter into a heat proof bowl and add the chopped up chocolate. 3. Fill a larger bowl with very hot water and gently float the bowl with the butter and chocolate in the bigger bowl of water. 4. The butter/chocolate mix will slowly melt and, as it melts, start to stir it gently to mix it all together.. Hold the bowl carefully while you still because you don't want to sink it or get water in the mix! 5. Break all the eggs, separating the whites into one container, and just 4 of the yolks into another container. 6. Put the egg whites into a clean oil free bowl and whisk them really well until they become white and fluffy. Add the sugar and whisk them again. 7. Add the 4 egg yolks to the chocolate mix, and still it gently to mix all the ingredients together. 8. Remove the bowl from its bath and pour the mousse into either a new large bowl or into several smaller bowls from which it can be served. 9. Put the bowls into the fridge for about 2 hours to let it set firm. 10. Serve the mousse straight from the fridge, and pour the cream over each serving before you eat it. |
